Healthy Travel Snacks

Food is one of the first things I plan and pack when preparing for a trip.  (I’m not the only one right?!)  Being the health nut that I am, having high quality food to snack on during a road trip, plane ride and/or stay at a hotel is a must.  Sometimes I struggle with what to bring, as most of the food I normally eat needs to be cooked or refrigerated.  But last weekend I put extra effort into my food-packing for our 8 hour road trip and the results turned out fairly well!

Watermelon Pops

It’s summer!  And it is hot out, SO hot!  I think the best way to cool down during these hot summer temperatures is by swimming in a nice, cool outdoor pool, or indulging in some sort of frozen treat or drink.

Last weekend I made these watermelon popsicles using just 5 ingredients…2 of which can be omitted, which makes for a 3 ingredient, healthy frozen treat!  And best of all, they do not require a mold of any sort.  All you need are the 3 ingredients: watermelon, coconut milk and chocolate and perhaps lollipop/popsicle sticks (although I suppose you could do without those too).

I like having treats that are made without refined sugar and these watermelon pops are just that; a healthy and kid-friendly treat that everyone can enjoy.

Quadruple Chocolate Ice Cream Cake

Quadruple Chocolate Ice Cream Cake.  What a mouthful! Try saying that 10 times fast 😛

Perhaps not the most original name for this decadent ice cream cake, but it describes the total chocolate overload that is delivered with every bite.  With an explosion of chocolate in each mouthful, this cake also encompasses a variety of textures: a chewy crust, smooth ice cream center, velvety fudge layer and crunchy cacao topping.  Let’s just say, if you love ice cream and chocolate, then you will love this cake.  And since it’s summer, it’s the perfect hot weather treat!

Organic Beef Burgers

If you follow me on Instagram, you saw this burger a couple weeks ago.  OMG!  Best. Burger. Ever.  The burger patty was made with organic ground beef and a vast array of veggies.  In combination with mashed avocado, onion, kale, spinach, pickles, a gluten free bread “bun” and a side of purple sweet potato and carrot fries, this was by far the best meal I’ve had in quite some time.  So, today I’m going to share my recipe for these burgers in hopes that you can enjoy a burger food coma of your own 😉

Red Pepper & Kale Crackers

Afternoon snacking.  Yeah, story of my life!  I’m a huge snacker, which strikes me as funny since I never used to be.  And I also eat relatively large meals.  But none the less, I am a snacker and I am always on the lookout for healthier options to curb my cravings and keep me energized.

One of my newest obsessions are these crackers.  Simply amazing!  Healthy, low-sugar, filled with veggies and spices and nuts.  They pair excellently with guacamole or hummus and fill that gnawing afternoon hunger.  They are slightly sweet because of the dates and you cannot even taste the kale!

Chocolate Covered Coconut Bites

Originally, these were going to be caramel bites made with dates and a little bit of coconut.  However, the consistency wasn’t quite right and before I knew it the coconut had taken over!  But not to worry, they tasted great anyway!

I love chocolate in all shapes and forms and a box of chocolates with various fillings (like the ones you get for Valentine’s Day) is one of my top favorites.  But I rarely eat them because of their high sugar content and long list of unrecognizable ingredients!  These Chocolate Covered Coconut Bites help fill that void.  Made with only 3 ingredients they are a much healthier version of those sinful (yet delicious) boxes of chocolates.
