Just as these Paleo chocolate chip cookies finished baking my four year old asked “What’s that yummy smell?”. I told him I had just baked some healthy chocolate chip cookies for us to have later. As I set the cookies up to take photos, he kept a hawk’s eye on me, well, on the cookies I suppose. He patiently waited for me to finish up, as he’s used to me taking photos of food so this was nothing new, and then reached in to grab a cookie the moment I was done. I could tell he had scanned the cookies for the one with the most chocolate chips (I don’t blame him, I do the same) and he dug right in with a huge, soon-to-be chocolate covered smile. Yes, he whole-heartedly approved of this recipe, along with my husband who ate half the batch the first day!
So today I’m sharing with you these Almond Butter Chocolate Chip Cookies made with almond butter and almond flour, sweetened with coconut sugar and filled with gooey chocolate chips. They are free of gluten, grains, dairy and make a great treat any time of the year (as you all know chocolate chip cookies do)!
