Have you started listening to Christmas music yet? Normally, I start digging into the Christmas tunes during October, but this year the time got away from me. It wasn’t until just after Halloween that I started rocking out to Jingle Bells and scanning Netflix for new holiday movies. But on the food side of things, my mind has been in over-drive and my taste buds have been ahead of the typical seasonal flavors. I suppose when you have a blog for sharing recipes that happens, haha!
Prior to September I was going all-out with the pumpkin, October brought in flavors of gingerbread, more pumpkin and cinnamon and my latest flavor obsession seems to be peppermint (which I associate with Christmas). These Paleo friendly, Mint Chocolate Chip Tigernut Flour Muffins are just the thing to get you in the holiday spirit if you aren’t already. They’re also just a great excuse to each chocolate 😉
These muffins are not only Paleo but nut free as well. They are sweetened with a hint of maple syrup and crushed chocolate chips and they have a refreshing minty flavor.
