Peppermint Protein Bars

We all have memories connected to specific flavors and smells and peppermint strongly reminds me of joyous Christmas mornings and softly falling snow on a frigid winter evening.  I usually consider peppermint in combination with chocolate to be a must.  But with these Paleo protein bars I wanted to try something different.  I wanted to highlight the peppermint and add just a touch of chocolate (aka chocolate drizzle) because the real star of the show for these no-bake protein bars is the sweet minty flavor.

These healthy Peppermint Protein Bars are sweetened with monk fruit, making them a healthy, low sugar option.  They contain collagen – perfect for increasing your protein intake as well as many other benefits (improved skin, digestion, hair, nails…).  They are also grain-free, gluten-free and contain just 8 simple ingredients.  They’re a crowd pleaser and a great holiday dessert option!

Ingredients

Bars

Topping (optional)

  • 1/3 Cup dark chocolate chips
  • 2 tsp coconut oil (room temp)
  • sprinkles

Instructions

  1. For the bars, combine all dry ingredients in a medium-sized mixing bowl.
  2. Mix in all wet ingredients.  First, stir with a fork, then knead dough with hands until it is well mixed and holds together.
  3. Press dough into a lined 8″ x 4″ baking pan*
  4. Place in the freezer for at least one hour to set.
  5. Remove bars from freezer and cut to desired shape/size.
  6. For the topping, melt chocolate chips and coconut oil on your stove-top in a small saucepan.  Set heat to low, stirring frequently until chocolate is fully melted.
  7. Drizzle chocolate over cut bars (you may not use all of the chocolate) and then add sprinkles before the chocolate has a chance to set.
  8. Store bars in the fridge or freezer.

Recipe makes 8 bars

*I recommend lining the pan with plastic wrap.  I simply cut a long piece of plastic wrap, folded it in half (to make it thicker) and then placed it in the pan.  Next, I added the dough and evenly spread it out with a spatula.  Then I folded the plastic wrap over the dough and used that as a barrier between my hands and the dough to press down the bars.  After freezing, removal of the bars was easy and the plastic wrap peeled off perfectly.
