Paleo Red Velvet Pancakes

When I shared my recipe for Paleo Red Velvet Muffins, I mentioned that I was using beet root powder in a lot of my baked goods, smoothies and pancakes.  Well, I wasn’t lying!  I used it in these easy-to-make Paleo Red Velvet Pancakes, giving them a lovely red hue and boost in nutrition without any hassle.

These healthy red velvet pancakes are free of gluten, grains, and dairy and are sweetened with a little maple syrup.

Paleo Red Velvet Pancakes

Ingredients

Instructions

  1. Combine all dry ingredients in a medium-sized mixing bowl.
  2. Add in wet ingredients.  Mix well.
  3. Grease pan with oil and set temperature to medium-low.
  4. Once pan is hot, add about 1/4 cup batter, cover and cook until bubbles start to form in the pancake.
  5. Remove lid, flip pancake and cook about a minute more or until done.
  6. Repeat steps 3-5 until no more batter remains.

Recipe makes 8 pancakes, using 1/4 cup batter per each

These pancakes were topped with tahini, slivered almonds and bee pollen.
