Nut-Free Energy Bites

Gotta love energy bites.  They are ridiculously easy to make, convenient, store well in the fridge or freezer, taste amazing and there are millions of different flavor combinations.  Well, I’m adding to the plethora of recipes out there by introducing these Nut-Free Energy Bites.

They are Paleo, Allergy-Free and even coconut-free for those that can’t have coconut.  You can make them Vegan Friendly by substituting the collagen for a plant based protein powder.

Nut-Free Energy Bites

Ingredients

  • 1/2 Cup raw pumpkin seeds
  • 1/4 Cup raw sunflower seeds
  • 1/4 Cup ground flax
  • 4 Medjool dates
  • 2 Tbsp collagen peptides
  • 1/2 tsp vanilla extract
  • 1-2 Tbsp water
  • cocoa powder for dusting (optional)

Instructions

  1. In food processor, combine all dry ingredients.  Blend to course flour.
  2. Add in vanilla and 1 Tbsp water, blend.  Add another Tbsp water if necessary.
  3. Remove dough from food processor and roll into balls (10-12).
  4. Roll balls in cocoa powder and place on baking sheet.
  5. Bake in preheated oven at 350 degrees for 10 minutes *
  6. Remove from oven, cool and eat.
  7. Store in fridge or freezer.

*Baking is optional.  You may instead place the energy bites in the fridge or freezer to harden.
