Collagen Pumpkin Bites

I’m going all-out with pumpkin this year!  Well, with all the fall foods to be honest.  I think the extremely hot summer we just had made me extra excited for fall this year.  And to fully embrace the cooler temperatures I’m diving right in to every fall food I can get my hands on.

I made these Collagen Pumpkin Bites for a healthy family dessert.  They are made with 9 simple ingredients and are grain-free and Paleo friendly.

Collagen Pumpkin Bites

Ingredients

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all wet ingredients in a medium-sized mixing bowl.  Mix well.
  3. Add in all dry ingredients.  Mix well.
  4. Pour batter into a lined 8″ x 8″ pan (or smaller).  Bake at 350 degrees for 25-30 minutes (middle rack of oven).
  5. Remove from oven and let cool completely before serving.

Recipe makes 16 bite sized pieces (if using 8″ x 8″ pan).

Topped a few of these with coconut cream and cinnamon.
