Spicy Coconut Butter Cups

No one in my family is a big fan of spicy food…in other words, I got to enjoy this entire batch of Spicy Coconut Butter Cups all on my own!

As I’ve said before, I love Eating Evolved and all of their products (including their coconut butter cups and roasted coconut butter), but it can be expensive to buy your own chocolates all the time.  So, I enjoy making my own every now and then.  Plus, making your own means that any and all flavor combinations are fair game.

These Spicy Coconut Butter Cups are made using 5 ingredients and are Paleo, Vegan and allergy friendly.  I used my Roasted Coconut Butter for this recipe, but you can use any type you wish.

So let’s get to it!

Spicy Coconut Butter Cups

Ingredients

Instructions

  1. In a small sauce pan, melt chocolate and coconut oil on low heat.  Stir frequently.
  2. Once fully melted, turn off heat and mix in cayenne and salt.
  3. Pour about 1 Tbsp of chocolate into mini cupcake molds, place in freezer and freeze until set. (Only takes a couple minutes.)
  4. Remove from freezer and add a spoonful of melted coconut butter on chocolate, freeze.
  5. Remove from freezer and add another Tbsp of chocolate on top of coconut butter, freeze.
  6. Store in fridge or freezer.

*Adding the coconut oil is optional, but I find that it helps with the consistency of the chocolate – making it easier to work with.

Recipe makes 8 Spicy Coconut Butter Cups.

If you don’t want these to be very spicy, then cut the amount of ground cayenne pepper in half (1/8 tsp).  It’s also optional to cut out the cayenne completely, however then these wouldn’t be Spicy Coconut Butter Cups 😉
