You all know my love for Eating Evolved products, especially their coconut butter cups. Well, these no-bake Peanut Butter Coconut Balls were inspired by those.
The filling is peanut butter, coconut butter, vanilla and a little coconut flour. I rolled the filling into balls and then dipped them into melted dark chocolate for a simple, satisfying and relatively low-sugar treat. Plus, if you store them in the freezer they are quite refreshing in all this summer heat.
I suggest storing these Peanut Butter Coconut Balls in the fridge or freezer. I’ve been reaching for a couple here and there for a filling snack between meals…they’re quite refreshing in this warm weather.
