This salad is here to show you that eating all your greens doesn’t have to be boring or tasteless. It has a kale base and is loaded with a variety of green super-foods; you know, just in case you need to up your veggie quota for the day/week 😉
Rinse kale and remove stems. Tear kale into bite-sized pieces and “massage” in olive oil. Plate
Rinse broccoli and cut into bite-sized pieces. Melt a bit of ghee on a small frying pan and saute broccoli on medium heat for 10-15 minutes. Sprinkle salt on broccoli and plate.
Peel and slice avocado. Plate.
Defrost frozen peas and add to plate.
Sprinkle dried edamame on salad.
Sprinkle pumpkin seeds on salad.
Rinse kiwi, then thinly slice and plate.
And it’s as simple as that! A healthy, all green salad that actually tastes good! I also suggest adding some type of protein. When eating this All Green Salad I added a lamb chop (seasoned with salt, pepper and rosemary).
