3 Layer Raw Mint Bars

These bars didn’t stand a chance in my house.  I think my boys and I managed to eat the entire batch in just 2 days!  I guess that just gives me an excuse to make them again and again 😉



These 3 Layer Raw Mint Bars have a soft cookie base, smooth and minty middle layer and are topped with a hard chocolate shell.  It’s the perfect texture combination to satisfy any chocolate lover.  These bars are Paleo and Vegan; therefore free of gluten, grains, dairy, eggs and refined sugar.


3 Layer Raw Mint Bars


Bottom Layer

  • 8 pitted dates (50-60 g)
  • 1/2 Cup unsweetened coconut chips
  • 1/4 Cup raw sunflower seeds

Middle Layer

Top Layer


  1. Put all bottom layer ingredients in food processor and blend until mixture can be pressed together and hold its shape.
  2. Line a small baking pan (I used 4″ x 8″) with foil and press bottom layer dough into pan.
  3. Add all dry middle layer ingredients to food processor and mix.  Add in maple syrup and almond milk (and peppermint oil if using) and mix.
  4. Remove middle layer from food processor and press on top of bottom layer.
  5. Melt chocolate in small saucepan on low heat.  Once fully melted, spread over middle layer.
  6. Place bars in fridge or freezer to set.
  7. Store in fridge or freezer.
