It’s been forever since I’ve had macadamia nuts and so I knew I wanted to incorporate them in a recipe. If you haven’t ever tried a macadamia nut, then you’re missing out. They are softer than most nuts and have such a rich, buttery flavor. Macadamia nuts are higher in fat than other nuts – containing a large amount of healthy monounsaturated and saturated fats; which is probably why they taste so darn good! Now if only they were cheaper because then I would be sure to buy them more frequently!
These Chocolate Macadamia Cookie Bites are the perfect little cookie for that not-too-sweet chocolate fix. This recipe makes 16 bite-sized cookies that are free of gluten, dairy and eggs.
*You may add more maple syrup to make this recipe sweeter. Just keep in mind that you may have to adjust the amount of water.
**Add the last 2 Tbsp one at a time – you may not need all water.
I used Eating Evolved Midnight Coconut Chocolate and some vegan chocolate chips for this recipe. I simply crushed the chocolate bar for the cookies and then melted the remainder of the bar with some chocolate chips for the coating. This flavor chocolate is a great option if you are looking for something lower in sugar (as there isn’t any sugar in this bar). If you purchase from the Eating Evolved website, be sure to use my code “katiehtmt” during checkout for a free gift. February’s free gift is a jar of Mint Choco Chip Chocolate Spread.
And of course add sprinkles for a festive flair (aka Happy Valentines Day)!
