Chocolate Macadamia Cookie Bites

It’s been forever since I’ve had macadamia nuts and so I knew I wanted to incorporate them in a recipe.  If you haven’t ever tried a macadamia nut, then you’re missing out.  They are softer than most nuts and have such a rich, buttery flavor.  Macadamia nuts are higher in fat than other nuts – containing a large amount of healthy monounsaturated and saturated fats; which is probably why they taste so darn good!  Now if only they were cheaper because then I would be sure to buy them more frequently!


These Chocolate Macadamia Cookie Bites are the perfect little cookie for that not-too-sweet chocolate fix.  This recipe makes 16 bite-sized cookies that are free of gluten, dairy and eggs.


Chocolate Macadamia Nut Bites



  1. Preheat oven to 350 degrees.
  2. Grind flax seed (I use a coffee grinder) and mix with 1/4 cup warm water in a large mixing bowl.  Let sit for 1 minute.
  3. Add all ingredients except water (1/4 cup + 2 Tbsp), macadamia nuts and chocolate chips to large mixing bowl and stir.
  4. Add in water (1/4 cup + 2 Tbsp)**.  Stir well.
  5. Add macadamia nuts and crushed chocolate bar (or chocolate chips) and mix.
  6. Roll dough into balls (about 16 Tbsp sized balls) and place on baking sheet.
  7. Bake at 350 degrees for 12 minutes.
  8. Let cookies cool completely.
  9. Eat as-is or dip cookies into melted chocolate.

*You may add more maple syrup to make this recipe sweeter.  Just keep in mind that you may have to adjust the amount of water.

**Add the last 2 Tbsp one at a time – you may not need all water.
