It’s been forever since I’ve had macadamia nuts and so I knew I wanted to incorporate them in a recipe. If you haven’t ever tried a macadamia nut, then you’re missing out. They are softer than most nuts and have such a rich, buttery flavor. Macadamia nuts are higher in fat than other nuts – containing a large amount of healthy monounsaturated and saturated fats; which is probably why they taste so darn good! Now if only they were cheaper because then I would be sure to buy them more frequently!
These Chocolate Macadamia Cookie Bites are the perfect little cookie for that not-too-sweet chocolate fix. This recipe makes 16 bite-sized cookies that are free of gluten, dairy and eggs.
*You may add more maple syrup to make this recipe sweeter. Just keep in mind that you may have to adjust the amount of water.
**Add the last 2 Tbsp one at a time – you may not need all water.
I used Eating Evolved Midnight Coconut Chocolate and some vegan chocolate chips for this recipe. I simply crushed the chocolate bar for the cookies and then melted the remainder of the bar with some chocolate chips for the coating. This flavor chocolate is a great option if you are looking for something lower in sugar (as there isn’t any sugar in this bar).
