White Sweet Potato & Veggie Bake with Spicy Italian Herb Sauce

I don’t post nearly as many savory recipes as I should.  Although most of my food is savory (see my Instagram for verification), when I make these dishes there is no recipe.  I simply throw together ingredients based on my taste preferences at the time.  When I cook meat for myself and my family I rarely measure anything out.  Usually, I will throw a bunch of spices and salt (I always use this brand Himalayan Pink Salt in my cooking) on the meat and call it good.  But I’m making an effort to add more savory recipes to my blog, no matter how simple they may be.  (FYI, I eat a lot of salads and I actually have a blog post on tips for making a great salad.)

White Sweet Potato & Veggie Bake with Spicy Italian Herb Sauce

Ingredients

White Sweet Potato & Veggie Bake

  • 400 g white sweet potato (about 2 cups cubed)
  • 150 g raw asparagus, base removed (about 20 medium-sized stalks)
  • 75 g raw sugar snap peas (about 20)
  • coconut oil*
  • Himalayan Pink Salt (to taste)

Spicy Italian Herb Sauce

  • 2 Tbsp coconut aminos
  • 1/2 tsp Sriracha
  • 1 tsp onion powder
  • 1 tsp Italian Herb Seasoning
  • 1/4 tsp chili powder
  • 1 tsp sesame seed
  • pinch of turmeric (optional)

Instructions

  1. Preheat oven to 375 degrees F.
  2. Wash and chop sweet potato and vegetables.
  3. Spread sweet potato and vegetables on cooking sheet and sprinkle with coconut oil and salt.
  4. Bake for 40 minutes on the bottom rack of your oven, stopping to flip veggetables half way through.
  5. For the sauce, combine all dry ingredients in a small bowl then add in wet ingredients.
  6. Remove roasted sweet potato and vegetables from oven, plate and add sauce as desired.  (Serves 2-3)

*The amount of coconut oil you use is up to you.  I keep a jar of coconut oil in the fridge (so it’s hard) and scrape out the amount I want, then sprinkle it over my food for baking.  You may also melt coconut oil and drizzle it over your sweet potato/veggies or use a coconut oil spray.
