Grainless Cinnamon Pear Muffins

Guys, this recipe is almost too good to be true.  Why?  Because not only are these muffins grainless, but they are egg-free, dairy-free and do not have ANY added sugar.  Yah, pretty amazing if I’d say so myself.

These Grainless Cinnamon Pear Muffins consist of just 10 simple ingredients.  They are sweet from the pears, but not too much that you feel you are eating a dessert.  These muffins make great snacks, on-the-go breakfasts or after-dinner nightcaps.

Ingredients

Instructions

  1. Preheat oven to 350 degrees F.
  2. Soak ground flax in water for 5 minutes.
  3. Wash and slice pears, removing the core.
  4. Put sliced pears and soaked flax in food processor and blend well *
  5. Add remaining ingredients to food processor and blend.  Stop every so often to scrape the sides, making sure dough is a consistent texture.
  6. Pour muffin batter into muffin tins (makes about 8 muffins).
  7. Put muffins in middle rack of the oven and bake at 350 degrees for 30-35 minutes.
  8. Remove muffins from oven and let cool in pan for a few minutes, then remove and let cool on a drying rack**

*If you do not have a food processor you can blend the pears in a blender and then transfer to a large mixing bowl.  The dough should turn out similarly.

**I let these muffins sit out overnight to dry out a bit because they are quite moist.  They can keep on the counter for a couple days, or be kept in the fridge for a week.
