Protein PB Cookies

These Protein PB Cookies are so fun!  They remind me of animal crackers simply because of the way they are shaped, but they are much more nutritious than any you’ll find in stores.  Of course, you don’t have to use the cookie cutters I did to make these cookies, any will do!  The dough can also be rolled out and cut with a knife or pizza cutter to make simple square/rectangular shapes…but animal shaped cookies are just more fun 😉

These Protein PB Cookies are gluten-free, dairy-free and only sweetened with maple syrup (and whatever sweetener from the protein powder you choose to use).  Although this recipe calls for peanut butter, any creamy nut or seed butter can be substituted to make this recipe peanut or even nut free.

Instructions

  1. Preheat oven to 350 degrees F.
  2. Add all dry ingredients to medium-sized mixing bowl and stir.
  3. Mix in peanut butter until dough is crumbly (using your hands works well).
  4. Mix in egg and maple syrup.
  5. Roll dough into a ball and then place between two sheets of parchment paper.  Use a rolling pin to roll dough into a flat sheet.
  6. Peel off top layer of parchment paper and cut dough into desired shapes.
  7. Place cut shapes on baking sheet and bake at 350 degrees F for 4-7 minutes, depending on cookie thickness.

Recipe makes approximately 3 dozen cookies, using THESE cookie cutters

*You may substitute any creamy nut or seed butter.  If your substitution makes the dough too moist, add a few teaspoons of rice flour until dough can be molded and rolled to cut out cookie shapes.  Also, if you are using unsalted nut/seed butter add a pinch of salt to the recipe.

These particular cookie cutters are fun because they leave an imprint in the dough.  All you do is press the cookie cutter into the dough and then press down the spring; leaving you with an animal shape and detailed imprints.  This comes in handy when you want nice looking cookies but don’t have time (or want) to frost them.
