Protein PB Cookies

These Protein PB Cookies are so fun!  They remind me of animal crackers simply because of the way they are shaped but they are much more nutritious.  Of course, you don’t have to use the cookie cutters I used to make these cookies, any will do.


These Protein PB Cookies are gluten free and only sweetened with maple syrup.  There are many ingredient substitutions you may use to tweak the recipe just how you want it (for example, you may use almond butter in place of peanut butter).

Protein PB Cookies



  1. Preheat oven to 350 degrees.
  2. Add all dry ingredients to medium-sized mixing bowl and stir.
  3. Mix in peanut butter until dough is crumbly (using your hands works well).
  4. Mix in egg and maple syrup.
  5. Roll dough into a ball and then place between two sheets of parchment paper.  Use a rolling pin to roll dough into a flat sheet.
  6. Peel off top layer of parchment paper and cut dough into desired shapes.
  7. Place cut shapes on baking sheet and bake at 350 degrees F for 4-6 minutes.

These particular cookie cutters are fun because they leave an imprint in the dough.  All you do is press the cookie cutter into the dough and then press down the spring; leaving you with an animal shape and detailed imprints.  This comes in handy when you want nice looking cookies but don’t have time (or want) to frost them.
