These Protein PB Cookies are so fun! They remind me of animal crackers simply because of the way they are shaped but they are much more nutritious. Of course, you don’t have to use the cookie cutters I used to make these cookies, any will do.
These Protein PB Cookies are gluten free and only sweetened with maple syrup. There are many ingredient substitutions you may use to tweak the recipe just how you want it (for example, you may use almond butter in place of peanut butter).

These particular cookie cutters are fun because they leave an imprint in the dough. All you do is press the cookie cutter into the dough and then press down the spring; leaving you with an animal shape and detailed imprints. This comes in handy when you want nice looking cookies but don’t have time (or want) to frost them.
