Super-Seed Cereal Bark

Cereal is not something I consider healthy, but I am all for balance and enjoying treats from time to time and Love Grown Foods has healthier cereal options that are great for creating cereal treats or simply treating yourself to a sweet snack.  Their cereals are all non-GMO, vegan, gluten-free and corn-free.  They are made from a blend of navy beans, lentils and garbanzo beans.  They also offer hot cereals and granola.

This Super-Seed Cereal Bark combines Love Grown Foods Strawberry Power O’s  with a blend of seeds, nut butter and dark chocolate for a healthier treat that’s not just filled with sugar, but provides a dose of nutrients and healthy fats as well.  Plus, it’s super easy to make, which is always a plus!

Super-Seed Cereal Bark

  • 50 g dark chocolate (I used 1/2 a Lindt 90% cocoa Excellence bar)
  • 2 Tbsp salted peanut butter (or any nut butter)
  • 1 Tbsp coconut oil
  • 2 Tbsp raw sunflower seeds
  • 2 Tbsp raw pumpkin seeds
  • 1 Tbsp unsweetened shredded coconut
  • 1/2 Tbsp chia seed (I used Salba Chia)
  • 1 1/2 Cups Love Grown Foods Strawberry Power O’s (or any Power O’s flavor)

  1. In a small saucepan, melt chocolate, peanut butter and coconut oil on low heat.  Stir frequently until fully melted.
  2. Turn off burner and remove mixture from heat.  Add in sunflower seeds, pumpkin seeds, shredded coconut and chia seeds.  Stir.
  3. Add cereal and stir until well coated.
  4. Line a pan with wax paper and spread out mixture to desired thickness.  (Optional: sprinkle additional chia seeds and shredded coconut on top of cereal bark.)
  5. Place pan in freezer to set.  (About 10-20 minutes depending on thickness)
  6. Remove from freezer and break into chunks.  Store in fridge.
