Chocolate Chip Plantain Brownies

I’ve already posted a recipe for plantain brownies (see Protein Plantain Brownies) and this one, although similar, is slightly different and actually better (IMO). Β But of course, adding chocolate chips to any recipe makes it better πŸ˜‰

These Chocolate Chip Plantain Brownies are vegan, paleo-friendly and great for anyone with food allergies or sensitivities.

My son has suffered some digestion and skin issues ever since he was a baby and we finally decided to get him tested for food sensitivities. Β He didn’t react well to: dairy (even goat’s milk), eggs, chicken, hazelnuts or amaranth. Β The chiropractor (who administered the test) also suggested cutting out almonds for the time being. Β My son is a huge fan of eggs and cheese and probably consumes more chicken than any other type of meat…so needless to say, we have had quite the dietary changes to make. Β Our plan is to eliminate all of these foods he is sensitive to for 3 months, then slowly introduce them back into his diet to see if he has any sort of reaction. Β I’ve had to get creative in the kitchen, mostly due to the absence of eggs, and create some healthy allergen-friendly recipes for him. Β These Chocolate Chip Plantain Brownies were something he greatly enjoyed!

Chocolate Chip Plantain Brownies

Ingredients:

  • 1 large, ripe plantain (about 200 g peeled)
  • 3 medjool dates, pitted
  • 1/4 tsp vanilla extract
  • 2 Tbsp cocoa powder
  • pinch of salt (optional)
  • 1/8-1/4 cup chocolate chips (I used Enjoy Life Mini Chips)

Instructions

  1. Preheat oven to 350 degrees
  2. Peel and slice plantain. Β Add plantain and dates to food processor and blend until smooth (stop to scrapes sides every so often).
  3. Add vanilla extract, cocoa powder and salt to mixture. Β Blend.
  4. Stir in chocolate chips with spatula.
  5. Remove dough from food processor and place in small pan or spread out evenly on a baking sheet (lined with parchment paper).
  6. Bake at 350 degrees F for 10-12 minutes (top rack of oven).
  7. Let cool, cut and top with coconut cream.
  8. Store in fridge.

I topped these browniesΒ with Trader Joe’s Coconut Cream (refrigerated) and Essentially Coconut’s Butter Pecan Coconut Butter.
