Chocolate-Kale Cookies

You wouldn’t know it, but these gooey chocolate cookies are healthy – made with kale, avocado, hemp seeds, coconut, non-alkalized cocoa, eggs and sweetened with dates and a touch of maple syrup.  Best of all, these cookies are kid approved!

Chocolate-Kale Cookies

Ingredients

  • 20 g raw kale
  • 1/4 large avocado (40 g)
  • 7 medjool dates (100 g)
  • 1/4 cup unsweetened shredded coconut (20 g)
  • 2 eggs
  • 1/4 cup raw hemp seed (32 g)
  • 1/2 cup Wild Chocolate Powder (45 g)
  • 1 Tbsp maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt
  • 2 Tbsp coconut flour

Instructions

  1. Preheat oven to 350 degrees.
  2. Add kale, avocado, dates and coconut to food processor.  Blend until mixture forms a sticky paste.
  3. Add eggs, hemp seed, Wild Chocolate Powder, maple syrup, vanilla extract and salt. Mix.
  4. Add coconut flour and mix.  Dough should be sticky, but mold-able.
  5. Remove dough from food processor and roll between 2 sheets of parchment paper.  Roll to about 1/4″ thick.
  6. Put on baking sheet (keep both pieces of parchment paper) and bake for 12-15 minutes.
  7. Remove cookie sheet from oven.  Peel off top layer of parchment paper and cut out cookie shapes with a cookie cutter.
  8. Move cookies to wire drying rack and let cool.
