Vegan Seed Brownies

I introduce you today to my take on the “typical” Vegan chickpea brownie.  These healthy treats are nut-free, gluten-free, grain-free, egg-free and dairy-free.  So, basically free from everything but: chickpeas, seeds, maple syrup, cocoa, vanilla extract, almond milk and salt.  These Vegan Seed Brownies are super simple to throw together, quick to bake and deliciously moist!  Definitely a treat that will be on repeat at my house.


Vegan Seed Brownies


  • 1 can low sodium chickpeas (rinsed and drained)
  • 2 Tbsp hemp seeds
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw pumpkin seeds
  • 1 Tbsp chia seeds (soaked in 2 Tbsp water)
  • 1/4 cup maple syrup
  • 1/4 tsp vanilla extract
  • 1/4 cup unsweetened vanilla almond milk*
  • 1/4 cup cocoa powder
  • pinch of salt


  1. In a small cup/container, soak chia seeds in water.  Let sit for at least 10 minutes.
  2. Preheat oven to 350 degrees.
  3. In a food processor, combine hemp seeds, sunflower seeds, pumpkin seeds,  chickpeas, and salt and blend until a consistent dough is formed.
  4. Add soaked chia seeds, maple syrup, vanilla extract and almond milk to dough.  Blend well.
  5. Add in cocoa powder and blend.
  6. Put brownie batter in a lined pan (mine was 8″ square) and bake for 15 minutes.
  7. Turn off oven and leave brownies in for another 10 minutes.
  8. Take brownies out of oven and cool.
  9. Eat or store brownies in fridge.

*can sub any milk

Un-decorated brownies.  Yah, they look pretty boring when they’re not decorated.  I highly suggest using a bit of frosting and a sprinkling of seeds to dress them up.

The icing I made was not vegan…I know, I know…I should have thought that out a little better before making it, but we had some heaving whipping cream that needed to be used.  Anyway, I made this frosting out of heavy whipping cream and maple syrup.  I simply put it in a mini blender and whipped it up.  It was SO sweet (that’s what happens when you don’t measure out maple syrup).
