Carrot & Apricot Crackers

Honestly, I had no clue how this flavor combination was going to turn out.  Apricots and carrots in a cracker?  I don’t even particularly like apricots… But wow, these turned out great!  The flavors do work, so well that It’s hard to keep my hands off of these sweet crackers.  They are like a nutty graham cracker with a very subtle apricot taste.  As for the carrots, they are unrecognizable but offer a slightly rusty color and provide a few extra nutrients, which is always a bonus in my opinion.


Carrot & Apricot Crackers


  • 50 g peeled carrot
  • 75 g dried apricot
  • 1/2 cup dry roasted almonds
  • 1/4 cup raw walnut halves
  • 1/4 cup unsweetened shredded coconut
  • 1 Tbsp chia seeds
  • 1 Tbsp collagen
  • pinch of pink Himalayan sea salt


  1. Preheat oven to 215 degrees F.
  2. Add peeled carrot and dried apricots to food processor.  Blend for a couple minutes, until finely chopped.
  3. Add remaining ingredients to food processor and mix well (until dough starts to form a ball).  Stop to scrape the sides every few minutes.
  4. Remove dough from food processor and roll out into a thin sheet*.
  5. Put sheet of dough on a baking pan and place on the top rack of your oven.  Bake at 215 degrees for 30 minutes.
  6. Take crackers out of the oven and flip.  Use a knife or pizza cutter to cut the crackers to desired shape and size.  Place crackers back into the oven and bake for another 30 minutes.
  7. Remove crackers from the oven and flip one last time.  Cook for another 30 minutes.
  8. Remove crackers from the oven and let cool.

*I suggest rolling the dough between two sheets of parchment paper with a rolling pin and leaving the dough between the parchment paper during the first 30 minutes of cooking.  This makes it easier to flip the crackers without them breaking.  After you flip them the first time, then remove the top sheet of parchment paper and cut.


The quantity of crackers this recipe makes will depend on their thickness, but I was able to make approximately 45 one inch square crackers.
