Red Pepper & Kale Crackers

Afternoon snacking.  Yeah, story of my life!  I’m a huge snacker, which strikes me as funny since I never used to be.  And I also eat relatively large meals.  But none the less, I am a snacker and I am always on the lookout for healthier options to curb my cravings and keep me energized.



One of my newest obsessions are these crackers.  Simply amazing!  Healthy, low-sugar, filled with veggies and spices and nuts.  They pair excellently with guacamole or hummus and fill that gnawing afternoon hunger.  They are slightly sweet because of the dates and you cannot even taste the kale!


Red Pepper & Kale Crackers


  • 20 g raw Kale (about 1/2 cup chopped, stems removed)
  • 50 g red bell pepper (about 1/3 Cup chopped)
  • 1/4 Cup sunflower seeds
  • 1 Tbsp sesame seeds
  • 1/4 Cup walnut pieces
  • 3/4 Cup rolled oats
  • 25 g pitted dates (4 dates)
  • Pinch of salt, garlic powder and ground black pepper


  1. Preheat oven to 350 degrees F.
  2. Add all ingredients to food processor and blend well.  Stop to scrape the edges every so often.
  3. Once dough is well mixed, remove from food processor and roll out between 2 sheets of parchment paper or silicon baking mats.
  4. Remove top sheet of parchment paper and transfer dough to baking sheet.*
  5. Set baking sheet in oven (middle rack) and bake at 350 degrees for 15 minutes.
  6. Remove crackers from oven.  Cut into desired shape and flip, then bake another 10-15 minutes.**
  7. Remove from oven and let cool.

*If the dough is sticking to the paper, then just bake crackers with paper.

**Edge pieces may cook faster than center ones, so I suggest keeping an eye on your crackers during the last few minutes.


I have made these Red Pepper & Kale Crackers for my family a number of times and this recipe is always a hit.  Our favorite way to eat them is with mashed avocado/guacamole.


One of my favorite things about these Red Pepper & Kale Crackers is the fact that they have “hidden” veggies in them.  I don’t usually have an issue getting my boys to eat vegetables, but a few extra never hurt anyone 😉
