Paleo Poppy Seed Cookies

I have never baked with poppy seeds before.  I don’t even know what inspired me to use this ingredient, but I’m sure glad I did, as these little Paleo Poppy Seed Cookies turned out delicious.  I am not a fan of lemon flavored desserts, which are often put in combination with poppy seeds.  That is probably what has veered me away from using them in the past.  But poppy seeds remind me of spring and sunshine and with all the lovely weather we have been having lately I guess I was destined to make these cookies 🙂

This recipe makes about 8-9 bite-sized cookies.  They are Paleo-friendly and low in sugar; just the way I like my treats.

Paleo Poppy Seed Cookies

Ingredients

  • 2 Tbsp coconut oil (room temp)
  • 1 Tbsp unsalted almond butter
  • 1 Tbsp Maple syrup
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut flour
  • 1/4 cup arrowroot flour
  • 1/4 tsp baking powder
  • 1/2 tsp poppy seeds
  • pinch of salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine coconut oil, almond butter and maple syrup in a medium sized mixing bowl.
  3. Stir in egg and vanilla.
  4. Add coconut flour, arrowroot flour, baking soda, poppy seeds and salt.  Mix well.
  5. Roll dough into balls (about 1 Tbsp in size) and place on baking pan.  Flatten using a fork.
  6. Bake in preheated oven for 8-10 minutes.
