Paleo Crepes

One of my favorite things about the weekend is spending a few extra minutes cooking breakfast and then sitting down at the table with my boys and enjoying our meal.  I usually make pancakes on Saturday mornings, but this past weekend I decided to mix things up a bit and made crepes instead.  This recipe is grain-free and Paleo friendly, perfect for a healthy breakfast!

Paleo Crepes

Ingredients

Instructions

  1. Whisk eggs in a medium-sized mixing bowl.
  2. Add the remaining ingredients and mix well.
  3. Turn on stove-top and set to medium-low temperature.  Then thoroughly grease frying pan with coconut oil.
  4. Pour batter on pan and cook until slightly brown.  Flip and then cook about 1 minute longer.
  5. Put desired toppings on crepe and then roll up and eat!

This recipe will make 3-5 crepes, depending on pan size and crepe thickness.

I wasn’t sure how well these would hold together, but they worked almost perfectly for me…and I’m by no means a crepe expert!  The secret is to put enough batter on the pan, coating the entire base, and then let it cook almost completely on one side.
