Grain-Free Graham Crackers

I have been experimenting with cracker recipes because, well, I have a toddler and crackers make for an easy, slightly less messy snack.  I like to have crackers on hand for car trips and “emergencies” (when a toddler is hungry, he/she is HUNGRY NOW) but I find that the “healthier” the product, the more expensive it is.  These Grain-Free Graham Crackers taste like the real deal, but they are so much more nutritious!

Graham crackers are not something I would normally consider healthy, but these crackers (or would you consider them cookies?) only contain nuts, seeds, and natural sugars (dates and honey).  They are perfect for a quick grab and go snack that packs a bit of nutrition and/or pair perfectly with a tall glass of milk.  And don’t get me wrong, these Grain-Free Graham Cracker are definitely not just for children (I have eaten my fare share ;)).

Grain-Free Graham Crackers

Ingredients

  • 1/4 Cup unsweetened shredded coconut
  • 1/4 Cup raw almonds
  • 1/4 Cup raw brazil nuts
  • 1/4 Cup raw pumpkin seeds
  • 1 Tbsp hempseed
  • 1 Tbsp honey
  • 15 pitted dates
  • pinch of salt
  • 1 tsp cinnamon

Instructions

  1. Put all ingredients in a food processor.  Blend until batter is consistent and can be formed into a ball (4-5 minutes)
  2. Put dough on a silicon baking mat or non-stick surface. Roll dough into a “log” using your hands.
  3. Using a rolling pin, flatten out the dough to desired thickness (I did about 1/4″ thick).
  4. Cut out graham cracker shapes using a cookie cutter and place them on your lined baking sheet.
  5. Bake at 250 degrees for 20 minutes.
  6. Let cool, then remove from pan.

The final product tastes just like a good-old-fashioned graham cracker; like the Teddy Grahams I used to eat as a kid.  Their texture, however, is softer than most graham crackers – slightly chewy.

I will definitely be experimenting with more healthy snacks to have on hand because these were such a hit!
